What are microgreens?

Within this 10-14 day time-frame, the plant peaks out in nutritional content. During this phase, nutrient density can be up to 40 higher than the adult plant’s levels. 

The microgreen stage is when the plant has developed its cotyledons, or its first set of “leaves” but before it develops its true leaves.

What makes microgreens different from sprouts?

Aside from the plant’s age, one difference between sprouts and microgreens is the nutritional density. Sprouts are not as nutrient-dense as the plants are in the microgreens stage. 

Another difference and far more concerning is that sprouts have to be cultivated in dark and humid conditions. That’s the perfect breeding ground for any bacteria lying around on the seeds’ surface. Microgreens have already broken out of the soil and have been exposed to sunlight so there is less risk of bacteria. 

This exposure to the sun also means there is the added benefit of phytonutrients. It also means that microgreens have had the chance to develop more Vitamins A, C, K and folates. Physically, it’s easy to tell which is which because unlike sprouts, microgreens have leaves.
